What Is Sago?

Unlike tapioca (which comes from the cassava root), sago comes from palm trees. However, in modern commercial production, many products labelled "sago" are actually made from tapioca starch, as it's more cost-effective and produces a similar texture.

How to Cook Sago Pearls Perfectly

  1. Boil water — Use a large pot with plenty of water (10:1 ratio of water to sago)
  2. Add sago — Pour sago pearls into rapidly boiling water. Stir immediately to prevent sticking
  3. Cook for 15 minutes — Keep at a rolling boil, stirring occasionally
  4. Check doneness — Pearls should be mostly translucent with a tiny white dot in the centre
  5. Turn off heat and cover — Let sit for 10 minutes until fully translucent
  6. Rinse in cold water — Drain and rinse under cold water to stop cooking and remove excess starch
  7. Add to your drink or dessert — Use immediately for best texture
