Here are some of the most common black teas used in bubble tea shops:
Assam
Assam is an Indian black tea known for its bold flavour and rich aroma, often used in breakfast blends such as English Breakfast. Its flavour is frequently described as malty, sweet and creamy, and it brews into a dark reddish tea. This makes it perfect as a strong base for classic milk tea.
Ceylon
Ceylon black tea has a slightly citrusy character, with the gentle tang of orange or grapefruit. It is one of Sri Lanka’s main exports and is well‑known worldwide. Ceylon makes an excellent afternoon black tea and adds a bright, clean note to bubble milk tea.
Earl Grey
Earl Grey is the most citrusy of these three options, with a distinct floral aroma from bergamot oil. It brews into a lighter tea and is often enjoyed in the morning. In bubble tea, Earl Grey creates a more fragrant, non‑traditional milk tea that continues to gain popularity.
Tea Blends
A blend of teas is perhaps the most popular option among milk tea shops because it allows each brand to design a unique flavour. Different shops use different proportions of Assam, Ceylon, Earl Grey and other teas, which is why their bubble milk teas never taste exactly the same.
Bubble Milk Tea Recipe with Real Black Tea (16 oz)
This recipe makes one 16 oz (about 500 ml) serving of classic black milk tea using real tea leaves.
Ingredients

Water–tea ratio: 35 ml water : 1 g tea

1.5 cups (350 ml) water

4 tsp (10 g) black tea leaves

2/5–3/5 cup (35–50 g) non‑dairy creamer or half‑and‑half (adjust to taste)

1/5 cup (50 g) sugar or 2 tbsp (1 oz) fructose syrup (adjust to taste)

1 cup of ice

Cooked tapioca pearls (optional, for topping)
Step‑by‑Step Instructions
Step 1 – Brew the tea
Boil 350 ml of water.
Once the water reaches 90–100°C (194–212°F), stir in 10 g of black tea and keep it boiling gently for 12 minutes.
Step 2 – Let the tea infuse
Remove the pot from the heat and cover it with a lid.
Let the tea sit for another 12 minutes so the flavour can fully infuse.
Step 3 – Check the temperature
After 12 minutes, the tea should cool naturally to around 50–60°C (122–140°F).
Tip: For the best results, make sure the tea does not cool below 50°C (122°F) before you add creamer and sugar.
Step 4 – Strain the tea
Filter the tea through a tea cloth or fine strainer into a clean container to remove the tea leaves.
Discard the used leaves.
Step 5 – Add creamer and sugar
While the tea is still warm, add your non‑dairy creamer or half‑and‑half and sugar or fructose.
Use a whisk or spoon to stir thoroughly until everything is fully dissolved.
If you are having trouble dissolving the creamer and sugar, it usually means the tea has cooled down too much.
Step 6 – Cool and shake
Add ice and the tea mixture into a shaker.
Shake well to chill the drink and create a smooth texture.
Adjust the amount of ice based on your preference.
Step 7 – Add toppings and serve
Pour the milk tea into a serving cup.
Add tapioca pearls or your favourite toppings, and enjoy your freshly brewed bubble milk tea made with real black tea.
