How to Brew Bubble Black Tea (Plain Tea Base for Bubble Tea)
A good bubble tea always starts with a good tea base.
This guide shows you how to make plain black tea, oolong tea, green tea or oolong green tea for bubble tea, using standard recipes for 500 ml and 700 ml cups.
Standard Recipe for 500 ml of Plain Tea
Suitable for:

500 ml Recipe

Tea: 200 ml brewed tea

Fructose (syrup): 30 ml
-
Ice: Fill to the top (crushed ice)
Directions (500 ml)
Step 1 – Add tea and fructose

Pour 200 ml of brewed black / oolong / green tea into a 500 ml shaker.

Add 30 ml of fructose syrup.
Step 2 – Add ice and shake

Fill the shaker with crushed ice to the top.

Close the lid and shake well until the tea is cold and the sweetness is evenly mixed.

Pour into a 500 ml cup – your plain iced tea base is ready to drink or to use as the base for milk tea, fruit tea and other bubble tea recipes.

If you serve larger drinks, use this recipe for 700 ml cups.

Ice: Fill to the top (crushed ice)

Step 1 – Add tea and fructose

Pour 250 ml of brewed tea into a 700 ml shaker.

Add 40 ml of fructose syrup.
Step 2 – Add ice and shake

Fill the shaker with crushed ice.

Shake until the drink is well chilled and the flavour is balanced.

Pour into a 700 ml cup and serve as a refreshing iced black tea, oolong tea or green tea – or use it as the base for flavoured bubble tea drinks.
Tips for Better Bubble Black Tea

You can adjust the amount of fructose to match your customer’s sweetness preference (less for lighter teas like green tea, more for strong black teas).

Use freshly brewed tea for the best aroma; avoid tea that has been sitting for many hours.

To keep the flavour fresh, it’s best to serve and drink within 1 hour after shaking with ice.
